BBQ Chicken Salad with Roasted Vegetables and Pineapple Reduction Sauce

My family is very spread apart right now. We live in 5 different states. Once a year, we make it a point to be together. This is our 3rd year doing so, and this year we did things a little differently. We left the comfort of the beach, and the uncomfortable setting of the hotel rooms, rented a cabin and headed to the mountains. I, naturally, volunteered to play chef for the entire weekend, This salad was the main course for dinner on the night we arrived. My brother and I ran the kitchen like a skilled chef and suex chef with the excitement of being together after a long break. He ran the grill and I ran the kitchen. The dishes, plated and served, returned with not a leaf left. From my kitchen to yours. 


You will need: (serves 2 people)
1 lb chicken breast
1 container of Spring mix salad
2 Roma tomato 
1 sweet bell pepper, seeded and rough chopped
1 small yellow onion, thick sliced 
1 small cucumber, peeled and sliced
1 sweet potato, peeled and sliced
1/2 bag of baby carrots
2 Tbsp Ruth's BBQ Mix
2 Tbsp coconut oil

Reduction Sauce:
1 can pineapple tidbits with the juice
1/2 rasher of bacon, cubed and drained
1 green onion, chopped
1/2- 1cup vegetable broth
1 clove garlic, minced
1 Tbsp coconut sugar
pinch of salt
Directions:
-->Preheat oven to 400*, line 2 roasting pans with parchment paper. 
-->In a large bowl, mix pepper, onion, sweet potatoes and carrots with 1 Tbsp melted coconut oil and Ruth's BBQ mix. Spread on roasting pan.
-->Brush chicken breasts with 1 Tbsp melted coconut oil and season with Ruth's BBQ mix. Place on prepared roasting pan.
-->Roast for 35-40 minutes. This can also be made on a grill. 
-->While vegetables and chicken is roasting, prep your salad for plating and make Reduction sauce.
-->Reduction sauce: In a medium skillet on med heat, add whole can of pineapple tidbits with juice, 1/2 cup vegetable broth, garlic, coconut sugar and pinch of salt. Simmer until thicken slightly, adding in the bacon and green onion. 
-->Remove vegetables and chicken from oven or grill and slice your chicken.
-->Plate your salad and drizzle reduction sauce.
